Vegetable Beef Soup

Fall and allergy season is upon us.  So I’m making alllll of the soups.  One of my family’s all time favorites is this Vegetable Beef Soup!  I’ll keep this intro short because we all know you’re here for the goods, not the chatter 😉


Vegetable Beef Soup

1-2 lbs ground beef

1 large head of cabbage – chopped into 1 inch pieces

1 c carrots – diced

1 medium onion – diced

4 stalks celery -chopped

2 T garlic – chopped

1 T lemon juice

3 T brown sugar

1-2 cans petite diced tomatoes

1 T beef bouillon

70 oz water OR 4 cans beef broth and 2 cans water in place of beef bouillon

3 oz tomato paste – more/less depending on desired thickness

3/4 c rice

Pepper – to taste

Brown beef in a large stock pot then drain.  Return beef to pot and add cabbage, carrots, onions, and celery.  Sweat for 10 minutes with a lid on, stirring occasionally.  Add remaining ingredients EXCEPT rice and bring to a boil.  Add rice and lid then lower heat to a simmer for 45 minutes.  Enjoy!

I serve this hearty soup with grilled cheese and my guys LOVE it!!  I hope your family does too!
